Turkey Zucchini Burgers with Lemon Yogurt Sauce

Since I have officially started the countdown to my wedding, I am looking for absolutely every possible way to have healthy, hearty meals throughout the week. I really want to cut back on carbs and sugars, so I am invariably looking for fun and delicious recipes!

This one takes the cake 🙂

This was something I came across on Pinterest one day, bored at home, waiting for the hubs to get off work. I am obsessed with the Mediterranean style of cooking/eating, so this recipe was an instant “must-do”.

Ingredients :

  • 1 lb ground turkey
  • 1 zucchini, grated
  • 1 egg
  • 2-3 scallions, thinly chopped
  • 2 tablespoons parsley
  • 2 tablespoons mint
  • 3-4 garlic gloves
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon cayenne pepper
  • a pinch of red pepper flakes

Directions :

In a small bowl for the lemon yogurt sauce :

— add 1 (7 oz) container plain greek yogurt

— zest of one lemon and then the juice of that lemon

— 1 tablespoon olive oil

— salt and pepper to taste

Heat olive oil on non stick pan for about a minute

Form small patties with the turkey burgers (combine all ingredients from above) and cook for about 5 minutes or until browned

Serve warm with lemon yogurt sauce on top or on the side

Add some scallions on top for garnish 😉
