Overnight Oats

I have a new fascination blooming in my fridge and it is the discovery of overnight oats! They are absolutely amazing and tasty and good for you!

Pretty much everything you want in a breakfast

They’re so versatile with what you can put in, and on them. Ugh…they are my favorite new breakfast treat. Especially having to wake up at the crack of dawn every morning, breakfast isn’t easy during the week; I am constantly grabbing hard boiled eggs or a protein shake, but there are those days I definitely need to mix it up to keep it interesting. This magical breakfast hits the spot!

I was in the strawberry banana mood this morning so I chose to top my oats with that, but anything really works. (I have seen such a variety of concoctions from friends and from Pinterest ⇐ they have some amazing recipes)

Ingredients :

  • ½ cup rolled oats
  • ½ cup almond/coconut milk (blue diamond almond coconut milk is the bomb.com)
  • ½ cup vanilla Greek yogurt
  • ¼ cup chia seeds
  • 1 teaspoon honey
  • 1 teaspoon vanilla

I combined everything into a mason jar and shook everything together until well blended and refrigerated it overnight. When I took it out in the morning and brought it to work, I cut up about a half a cup strawberries and a half of a banana and threw it on top
