Coconut Creme Pie Mugcake

And with that, it’s the absolute best day other than international pizza day πŸ•, but that’s for another post. I have been trying to create new mugcakes for about two years now, and I have built up quite a database of delicious and filling recipes that all range from healthy mugcakes to the not so healthy mugcakes πŸ™ŠΒ 

I have been trying to think of a cool ‘pi day’ recipe without making a whole pie. Since the hubby is in a business trip this week, it had been solo meals for this one (which isn’t always a bad thing, but we won’t tell him). The mugcake was super simple and super quick to make.

Ingredients :

  • 2 tablespoons butter
  • ΒΌ cup sugar ( I used truvia)
  • ΒΌ cup coconut milk (I used almond/coconut milk 60 calories)
  • 1/3 cup sweetened coconut flakes
  • 1 tablespoon almond flour
  • tiny tiny tiny splash of vanilla
  • 1 egg

Directions :

  1. melt butter in mug
  2. stir in every single ingredient except for the egg until well mixed — when the mixture is all mixed together and cooled down a little bit, add in the egg and blend
  3. microwave for 3 minutes and allow to cool for a minute
  4. serve with whipped cream and cherry πŸ’
