Beef and Broccoli

Need a delicious weeknight meal for the family? This beef and broccoli recipe with keep you on track as far as diet goes, but it will keep you full as well!

  • ½ cup water
  • 2 tablespoons water, divided
  • ½ teaspoon garlic powder
  • 1 lb flank steak or boneless round steak
  • 2 tablespoons vegetable oil or coconut oil
  • 4 cups broccoli
  • 1 small white onion
  • 3 tablespoons cornstarch
  • 3-4 cloves garlic
  • 1½ tablespoons brown sugar
  • ¼ low sodium soy sauce
  • 1 teaspoon ground ginger
  • brown rice ( I used Seeds of Change Quinoa and Brown Rice)

Directions :

  1. In a bowl, combine cornstarch, 2 tablespoons water and garlic powder and smooth
  2. Add in beef
  3. In skillet, add veggie/coconut oil and toss in beef and cook under desired tenderness, set aside in other bowl
  4. In the same skillet, add broccoli, onion and garlic for about 5-7 minutes
  5. Return beef to skillet and combine all together
  6. Add in brown sugar, soy sauce and ginger and stir until well combined
  7. Simmer for about 5 minutes until the mixture gets a little thicker

For the Quinoa and brown rice > cook according to package (90 min in the microwave) and serve under the beef and broccoli
