Italian Chicken with Veggies

Looking for something fun and healthy? This chicken and veggie dish satiates the palate even before you try a bite! It will leave your whole house smelling like a little Italian pizzeria; good enough to get everyone’s attention.

Ingredients :

  • 5-6 thinly sliced chicken breasts (I bought chicken breasts from Publix that were already thinly sliced)
  • olive oil
  • 12-13 oz mushrooms (sliced)
  • 14-15 oz grape tomatoes
  • 3-4 cloves garlic                               
  • ½ cup white wine
  • 1-2 tbsp lemon juice
  • ¾ cup chicken stock
  • 2 tbsp dried oregano
  • 3 tbsp all purpose flour
  • 2 tbsp parsley
  • pinch of crushed red pepper
  • salt and pepper to taste

Directions :

  1. Grill the thin chicken breast slices
  2. Heat splash of olive oil in pan. Add mushrooms and sauté for about 1-2 minutes (mushrooms should be getting soft and browned)
  3. Add tomatoes, garlic, oregano, salt and pepper and flour. Stir for about 5 minutes until well combined
  4. Add wine and reduce a little, then add lemon juice and chicken stock
  5. Bring to boil and then reduce to simmer – cook for about 5 more minutes
  6. Return grilled chicken to pan, engulfing with liquid, and simmer for about 10 more minutes

♠ ♠ ♠ serve with either angel hair pasta or eat as is — we went the low carb route and did not add pasta, but I’m sure it would be amazing!
