Sausage and Peppers with Zoodles

I am giving myself some major kudos for this meal tonight 🥘 

I haven’t made sausage and peppers in the longest time, but the hubby and I have been craving italian food lately, so we decided to go with something different for dinner tonight 🙃 This recipe calls for pasta, but we decided to substitute it with zoodles!

Ingredients :

  • 3 – 4 zucchini
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 large onions
  • 5 cloves garlic
  • 2 lbs turkey sausage
  • 1 cup mozzarella cheese
  • ½ cup Parmesan cheese
  • ½ teaspoon oregano
  • salt and pepper
  • pinch of crushed red pepper flakes
  • 10 leaves basil
  • 1 jar of any pasta sauce (I used Prego Three Cheese)

Directions :

  1. preheat oven to 350°
  2. Saute onions and peppers in a oiled pan until fragrant and translucent
  3. add garlic and cook for another 2 – 3 minutes
  4. while that’s cooking, zoodle the zucchini 😂
  5. Add sausage to peppers and onions and cook (we grilled the sausage for a couple minutes and then cut it up and added to pepper and onion mixture)
  6. add salt, pepper, crushed red pepper and oregano and stir
  7. add zoodles to mixture and combine well
  8. pour sausage and peppers into baking dish and cover with mozzarella cheese and bake for about 10-15 minutes or until cheese is golden brown and bubbling
  9. top with chopped basil and serve 🥂
