Buffalo Chicken Quinoa Bowl

Ever craving avocado, quinoa and buffalo chicken all in one bowl?? 🥑🍴

This bowl is the perfect remedy for that! It’s not only super simple, but it’s soooo pretty to look at!

Ingredients :

  • 3 chicken breasts
  • 2 oz low fat cream cheese
  • 1 cup cooked quinoa
  • ¾ cup franks hot sauce
  • 2 cups chicken stock
  • 1 cup cherry tomatoes 🍅
  • 2 avocados
  • 3 – 4 cups lettuce
  • 1 chopped red onion

Directions :

  1. Preheat oven to 375°
  2. To a medium sauce pan, add quinoa and chicken stock and bring to boil. Cover and reduce to simmer for about 12-15 minutes.
  3. While that’s cooking, add chicken breasts to oven and cook fully
  4. Shred chicken and add hot sauce and cream cheese and blend completely
  5. To plate, add lettuce in bowl and then begin to add Buffalo chicken, quinoa, chopped cherry tomatoes, sliced avocado, chopped red onions

~~~ I added a drizzle of light ranch dressing and some chopped cilantro on top ☀️
