Chicken Fajita Roll-Ups

The hubby and I have been doing a no carb/no sugar week this week so I have been on the lookout for low carb (if any carbs at aplace) recipes that will keep our taste buds dancing 💃🏼

This chicken fajita roll-up recipe is one for the books! It tastes amazing and it surprisingly easy to make.


Ingredients for the marinade :

  • 2 tbsp olive oil
  • 2 cloves garlic
  • juice of half a lime
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ salt
  • ½ dried oregano
  • pinch of cayenne pepper

Ingredients for the chicken :

  • 2 – 3 chicken breasts, depending on how many people
  • 2 red bell peppers
  • 1 orange bell pepper 🌶


Directions :

  1. Preheat oven to 375°
  2. In a small bowl, whisk together all the ingredients for the marinade
  3. Pound chicken until thinned out and pour marinade on and cover all breasts completely. Allow to marinate for 1 hour (for optimum flavor, marinate overnight)
  4. Wrap bell peppers in chicken and secure with tooth picks
  5. Place on baking sheet and cook for about 25 – 30 minutes, uncovered
  6. Serve with a lime wedge and some sour cream
