Mini Ground Turkey Pepper Rings

I looooovveeeeeee meatloaf (this recipe is supposed to be with meatloaf), but since red meat is not really my forte, I decided to substitute the ground beef with ground turkey! The ground turkey was still delicious and gave the meal a lighter feel.

 

Ingredients :

  • 3 red bell peppers
  • 1 lb ground turkey
  • ¼ cup Italian bread crumbs
  • 1 egg
  • ¼ Parmesan cheese
  • pinch red pepper flakes
  • 5 cloves garlic
  • 1 can crushed tomatoes (Italian seasoned)
  • 1 tbsp parsley
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1 cup three cheese blend

Directions :

  1.  Preheat oven to 350°
  2.  Cut peppers into rings taking out the seeds and ribs on peppers
  3.  Mix together ground turkey, bread crumbs, egg, Parmesan cheese, parsley, red pepper flakes, salt and pepper, garlic and any leftover parts of the red bell peppers
  4.  Stuff each pepper ring with the meat mixture to the top of the pepper ring
  5.  Heat olive oil in pan and brown each stuff pepper ring for about 5 – 6 minutes on each side
  6.  Transfer pepper rings to baking dish and cover each ring with crushed tomatoes
  7.  Bake for 35 – 45 minutes depending on oven
  8.  Remove from oven, top each stuffed pepper ring with cheese blend and bake for another 5 – 6 minutes until golden brown
