Bruschetta

I am suchΒ an advocate for hosting pot luck parties at the house! Although the hubby hates the cleanup, I think its super fun for everyone to be creative whether they make the food they bring or buy it.

This past weekend, we hosted a pot luck party to watch a big boxing fight that was going on. Instead of fighting the crowds, we decided to host it at our house and make it an event with food and drinks and games. I had everyone bring a dish of their choice and a drink of choice. The turnout was awesome! We had everything from bruschetta to cake to different dips around the table. I was so impressed with everyone’s choices.

I am obsessed with bruschetta whenever the hubby and I go to dinner; I am always the one looking over the appetizers the second I sit down so we can quickly place the order. And thank god Adam is obsessed with it too because if not, he would have to suffer through my craving for this dish.

This bruschetta is super easy and quick to make at the last minute. I like to let the flavors marinate for a little while, so I usually prepare it about an hour before needing it to be out. All that is required for this dish is to chop the tomatoes, garlic and basil leaves, mix everything together and poof! πŸ’₯ the bruschetta is done! I always like to toss it in some balsamic vinegar to give it that bite it needs.

For this party, I purchased a french baguette, spread some garlic butter on each one and baked them for about 7 minutes to get them nice and crunchy πŸ₯–πŸ…

 

Ingredients :

  • 2 – 3 lbs roma tomatoes (depending on the amount of people)
  • 1 head garlic
  • 7 basil leaves
  • 1-2 tablespoons balsamic vinegar
  • salt and pepper to taste
