Baked Chicken Cordon Bleu

After prepping for Hurricane Irma all week and then being out of power for a day, it was so refreshing to cook real meals again! Although I cooked wayyyyyyy too much it seems for the storm, I was getting sick of microwaving our meals!

This chicken cordon bleu was just what the doctor ordered! It was savory, but sweet at the same time! It definitely did the job of having a home cooked comfort meal that took less than 40 minutes to cook!

 

Ingredients :

  • 2 chicken breasts
  • salt and pepper to taste
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 6 – 8 slices Swiss cheese
  • 6 – 8 slices honey ham (you can use whichever you prefer, I just like mine sweet)
  • 1/2 cup almond flour
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup shredded Parmesan cheese

Directions :

  1.  Preheat oven to 325°
  2.  Using a meat tenderizer, pound the chicken in between 2 pieces of plastic wrap until thinned. Remove plastic wrap and layer swiss cheese and ham (I used 3 slices of each for each chicken breast)
  3.  Evenly roll up the chicken, ham and cheese and wrap in plastic wrap and tie off each end so they are nice and tight. — It’s best to refrigerate the rolled up chicken to allow it to take shape, but its up to you
  4.  Lay out almond flour, eggs and panko breadcrumbs in three separate deep dish bowls and begin to dredge the chicken into each
  5.  In a deep pan, heat oil
  6.  When the chicken cordon bleu is dredged, place, one at a time, in the oil and allow to cook about 5 minutes on each side or until golden brown
  7.  On lined baking sheet, place the chicken cordon bleu on it and bake for about 5 – 10 minutes depending on how hot the oven gets (I checked them after 5 minutes increments and decided from there)
  8.  Allow to cool for a couple minutes and slice to serve
