Baked Chicken & Veggies

When the hubby and I first bought our house, I was extremely new to having a full time job, having a house to clean and manage and somehow find time for ourselves. I quickly decided we were going to be the type of family that eats dinner at home most nights of the week for health purposes, but also because I grew up with having family dinners 6 out of the 7 nights a week!

I instilled it in my hubby’s head (and I will with our kids someday too) that dinner time is an important part of the day. We are able to relax and have some quiet time to talk about our day without any distractions. It’s, honestly, my favorite time of day!

When my mom and dad came to visit us at the house for the first time, we were unpacking and painting all weekend long that we didn’t even think about dinner until it was 6 pm. And if you know my mom, we need  to figure out dinner by then or else! We eventually came up with this amazing baked chicken and veggie concoction that wowed all of us!

Both her and I, leaving the boys to do the heavy lifting, went to the store and grabbed whatever looked and sounded good to go with the chicken. We bought chicken (of course), a yellow onion, 3 – 4 rustic potatoes, carrots and celery to go into the dish and obviously a big side salad to go with it.

When we got home, we preheated the oven to 400° and began cleaning the skin off the chicken. Now, you can use whatever part of the chicken you like; the hubby and I loveeeeee the thighs, wings and legs, so that’s what I always use for this. After that, we just threw the chicken in a baking dish with sliced potatoes, onions, celery and the carrots and tossed them in a little bit of coconut oil and some smoked paprika seasoning.

Within 5 minutes of putting it in the oven, the whole house smelled like the smoked paprika! So crazy good! We baked everything for about 45 – 50 minutes until everything was nice and tender and then let it sit for a couple minutes to cool.

I’ve made this dish about 50 times since that first weekend and every time, I always try and mix it up, but the best is to keep it simple with the ingredients.

This recipe is perfect for those nights when you have a lot of random ingredients just laying around the house and you don’t really know what to do with! Butttttttt if any of you guys try something different, drop a comment and tell me how good it was!
