Spinch and Feta Stuffed Chicken

Andddddddd we’re back to reality

I don’t know if I’m getting older by the second or if time is moving faster than ever before, but the holidays went by unbeliveably quick this year!

With all the craziness going on, we got back on track monday night with the healthy, homemade dinners and working out. Thank god!! 😓

I wanted to use the rest of the feta I had in my fridge, so I decided to combine spinach and chicken and ¡voila!  dinner is served 🙃

Ingredients :

  • 2 chicken breasts
  • ½ – 1 cup crumbled feta
  • ¾ bag baby spinch
  • 1 cup Italian seasoned bread crumbs
  • 2 tablespoons melted butter
  • 3 tablespoons garlic, minced

Directions :

  1.  Preheat oven to 350°
  2.  Heat olive oil in large skillet and add the spinach and garlic until the spinach is wilted and cooked thoroughly.
  3.  Add in feta cheese and mix until all combined
  4.  Pound the chicken out until the breasts are flattened and add the mixture to each breast, still being able to either roll the chicken breasts up or fold them like a taco
  5.  I used toothpicks to hold the folded (or rolled) chicken and then I covered the chicken breasts in the bread crumbs until they were pretty well coated
  6.  Place the chicken breasts in a glass baking dish and pour the melted butter on top
  7.  Bake for about 30 – 35 minutes and serve 🍾🧀
